Twice-Baked Potatoes

Creamy, cheesy, and comforting, these twice-baked potatoes are a beloved cottage dish—simple to make, rustic in presentation, and always welcome beside roast meats or a crisp green salad.

Ingredients

  • 4 large russet potatoes
  • 4 tbsp butter, melted
  • 1/2 cup sour cream
  • 1/2 cup shredded cheddar cheese
  • 2 green onions, sliced
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Bake potatoes directly on the oven rack for 45–60 minutes, until tender. Cool slightly, then cut in half and scoop out the flesh into a bowl.
  3. Mash the potato with butter, sour cream, cheese, green onions, salt, pepper, and garlic powder until smooth and creamy.
  4. Spoon the mixture back into the potato skins. Bake 15–20 minutes more, until golden on top and heated through.
