Ingredients
- 4 large russet potatoes
- 4 tbsp butter, melted
- 1/2 cup sour cream
- 1/2 cup shredded cheddar cheese
- 2 green onions, sliced
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp garlic powder
Instructions
- Preheat oven to 400°F (200°C).
- Bake potatoes directly on the oven rack for 45–60 minutes, until tender. Cool slightly, then cut in half and scoop out the flesh into a bowl.
- Mash the potato with butter, sour cream, cheese, green onions, salt, pepper, and garlic powder until smooth and creamy.
- Spoon the mixture back into the potato skins. Bake 15–20 minutes more, until golden on top and heated through.
